If you are rich, CO is the may be the smell. CO is unspent fuel (result of beign rich.) I don't know if I would classify the smell as "sweet" but, don't know what I could classify it as otherwise (except just exhaust.)
If it is stumbling at 1/8 throttle, that should be the pilot jet. Are you rinning the stock carb? Is your K&N a direct mount filter? Have you ever had your valves adjusted?

I started a new job so Time is limited.
Should have the quad back Tuesday.
Now back to the question.
I don't think the pilot could flow enough fuel to be burning Black, but I've been wrong before.
Are you overheating, or boiling over?
Is the head torqued to spec?
Double check your work, IMHO.
