Default Engine Cooling

There has been alot of discussion about keeping the DS cooler and alternatives to fans. I have seen discussion on: radiator shrouds, radiator fluid additives, billet in-line coolers, etc. I have not read anyone mentioning the use of an oil cooler. Its obvious oil coolers work, it keep my old VW sandrail alive. The only down side to and oil cooler that I could see would be vulnerability from trail debris and crashes. So-Cal Fab has a heat exchanger that uses the cooling system to cool the oil. you can see pictures here. Whats the average or ideal operating temp of radiator fluid and engine oil?
