I love my Gators. I don't think your 700 will have any trouble spinning them. But with 12" wide on the front you're probably going to have some rubbing problems in the front. Probably going to need some spacers. They work great in the mud in my expirience. Never had them in the sand, but I have heard also that they aren't much good in it. Maybe someone with expirience with Gators in the sand will chime in.

I just traded my 589's for Gators and they work great in most conditions but not in sand as they will dig an bog your quad down. Gators are not as tough compared to the 589's but my P700 seems to turn them without any effort.
As for your sizing, 27" are perfect but I would stay away from the 12" wide on the front as your steering effort will double which will decrease the joy of riding vs the standard 10" width. Should you plan on riding on various trail conditions the 10" will be enough but if your bike is a pure mudder only, then put the 12" on the front but you will need spacers.
Mudbugs seem to get better reviews by ATV M members but I don't have any experience with the Bugs.
I wanted the Gators for the side lugs and they are a little lighter vs the 589's.
