Tire Sizes-I Don't Get It!!

Why are so many tires not actually the size it says on the sidewall?? On the 4X4 rear I run a pair of 26X12-12 ITP Blackwaters on ITP Magnum 12X7 rims (THESE RIMS ARE A WORK OF ART!!!). The 26" are a bit much for the little Rancher. Sure, the extra ground clearance is nice, but you lose some low end grunt (and low end is what utilities are all about). So, when I was selecting tires for the 2X4 Rancher, I picked 25X10-12 Blackwaters, on the same rims. Well, the 10" wide tires are actually WIDER than the 12" wide tires (and they are on the same rims). If I had known that, I would have gone with the 25" on the 4X4 to start with, and saved some low end torque. Go figure??
