for checking the needle and mainjet here is what i do. warm bike up to full temp. take it out and run it through the gears and stay right around 1/2 throttle all the way through the gears. you can even stay at 1/2 throttle in 5th for a while if you want. while going at 1/2 throttle, pull in the clutch and shut it off quickly. check the plug. do the same thing for the mainjet, but run the bike at full throttle and not 1/2. what i look for on the plug: i like it when i see a color change right on the bend of the plug. it will usually change from a gray to a tan right on the bend with the fuel i use. by the way, a cam shouldn't change the jetting.
