You could always try to find a massive wide open area (soccer fields, football fields, baseball diamonds- or better yet, farmers fields or pasture) and teach her to drive a standard and use a clutch.

Contrary to popular belief, driving simulators DO actually help teach you to drive a standard- if you learn to synchronize your fingers for shifting, it becomes much easier to synchronize your left and right hands, and left foot.
