Oil light coming on and off
This last weekend I went riding and my oil light came on when I was going 40 mph and there was nothing stuck in my oil cooling coil. It was very wierd, the light would come on then I might shift gears and it would go out, or even if I shut the machine down for a few seconds and turn it on again the light would be off. Wouldn't it stay on even after I shut it down.

First make sure that the oil level is correct and the oil has been changed somewhat recently. Then make sure the oil cooler is clean with no debris stuck to the front of it. Is the fan comming on, and does the motor feel hotter then normal?
If everything else seems normal, I'd check the wiring to the oil temperature sensor, and if that is OK, replace the oil temperature sensor itself.

The oil is new, I have enough in it and there is no debre. I cleaned the oil cooler a few times just to be sure.
The fan never came on, but when the fan ran the last couple of times the light would come on even if I just started it up. (Not the normal on for a few seconds)

It is an oil temperature light, and not an oil level light...lots of folks make that mistake. I think you just have a short somewhere or a bad sensor, because temp doesn't vary that much that quickly on an engine....and like you said, the fan isn't coming on. Get a service manual and trace out the lines and replace the sensor and you should be good,

I also have a questions about the fan controller behind the fender. My manual says it controls the fan but what does it do exactly? It is also in line with the oil light. My manual doesn't show more than it is between the fan and the fuse and that it is between the oil light and the temp sensor.
I also tried to look up the oil sensor on my parts website but I have been unable to find it.
I got to get me another book....

Can't check the unit itself. Only the wiring and components used or controlled with it.
Pretty much check the wire from the oil sensor for good connection at the terminal and check if the fan works when power is applied.
As far as tests at the harness connector, someone correct me if I am wrong here.
Light blue wire should have resistance to body ground of 9.5 to 10.5 ohms
Black/Brown to ground should read battery voltage with key on, also the pink wire to ground.
Blue wire and the green wire each to a body ground should have continuity.
Checking the oil sender, the oil has to be hot somewhere around 150 or 170 degrees and read 340 ohms around 150 degrees to 205 ohms at 170.
Suppose you can figure out how to make the fan run by jumping it with a battery (green wire on the fan is ground)
