I suppose the first thing I would do is check that the plug for the IAT is clean, dry and tight.
If the IAT sensor input was out of range, the engine should run, so I'm wondering if that really is your problem...

IAT is intake air temp sensor. It is mounted on the air box.
If you are going into deep water much, it would be a good idea to unhook the battery, then take apart every connector you can find to clean them with contact cleaner if needed, blow out any water or dust with an air compressor, and pack the connector with some diaelectric grease and reassemble...
