Does it come on and stay on when you turn the key to run, or does it come on after a while?
If it is on all the time, I'd suspect either damaged wiring harness or failed sensor. You could disconnect the sensor and if that shuts the light off, then it is likely the sensor.
The manual for newer foremans has a test procedure with a multi-meter, a thermometer, and a pan of oil on a stove. If you can find a manual for yours, it may have a similar test for the oil temp sender.

Ha,I hoped on here for the same question. I have a 1999 foreman 450es and my oil temp light gose on and off just when ever. My fan never comes on with the light tho. I figure its the oil sensor or the fan control unit. I don't know how to test them tho. I ordered a manual for it but its on back order and I would love to have this sorted out befor my sone and I take it for are frost ride. Thank you for the help

Well it comes on when i start it and goes off like its supposed to then sometimes it comes on when riding but has not lately since i changed the fuse but noticed that the fan has not been on at all even when it gets hot ,but found out some good news starter has not been working since i bought it found out the battery the guy put in is to big and thats been messing with it going to replace battery this week, thinking about paying someone to see if they can just hook up a toggle switch for it

The fan is a assist option, not a must option. The oil cooler will always do its job just by diverting the oil through it.
My 350 Big Bear had no fan assist oil cooler and the oil cooler was tiny, yet it never over heated in its zillion miles of use. The only way a air cooled motor will over heat is if the oil does not circulate.
