Sausage stuff

This may interest all of you guys that proccess your own deer.
I just found and bought a pneumatic sausage stuffer. I'll pick it up in Ohio this weekend. Just in time to get it ready for bow season.
I currently have a few large pcs of proccessing equipment, 30 quart mixer, hamburger patty maker and so on.
I have been making Italian and breakfast sausage for a few years with a meat grinder and stuffer attachment. One of the problems is if the meat is too fine the sausage comes out with the consistancy of a hotdog. This new rig holds about 50 lbs of meat in a cylinder with a stuffing tube at the top. There is an air compressor and holding tank that supplies air to a piston to push the ground meat up. The result is meat that is not ground into paste.
I'll post how this thing works if any one is interested.
