The idle adjustment on my Bayou 300 is a simple threaded mechanical hold-open thingy for the butterfly--you didn't adjust the pilot screw, by chance?
If you get physical closure of the butterfly with the idle adjustment, I'm at a loss about the fast idle, less'n the slide/needle's stickin', either binding or you have no needle spring/needle spring in wrong (the slide/needle/spring/spring holder must be in right); you said you had no air leaks.
Good luck!

I had an '87 Mojave that did the same thing. I never could get it fixed because it did it from the day I bought it to the day I sold it. I would check and see if any of your ports are clogged and chech if your float heigth is right. If it is not it could either be your fuel needle or your float bowl.
