Yamaha Grizzly 125 carb issues

Been a while. Son's Grizzly has been sitting for a year now. Decided to do some maintenence and get it ready to sell. Noticed carb gummed up, took apart and cleaned thoroughly, lots of gum. Cleaned tank and intalled new filters, used fresh fuel with stabilizer.
Here's what it's doing.
Starting cold with full choke, revs kinda high, notice small amount of "surging" going on.
when engine warms up, I got the "low end" pretty much straight, still kinda hard to find a happy spot though for low idle, if you rev up a little it usually stays at the higher rpm. the mid-range adjustment or I beleive the air setting seems to be close also. The big problem I'm having is the higher end, which I beleive is controlled by the plastic plunger coming in through the top of the carb. when reving up and holding at high rpms, engine pops and sputters baddly, undless I crack choke a little or place my hand over half of the air intake snorkel. When I cover half the intake coming out of the airbox, it instantly clears up.
How do I adjust this? I did notice some carb issues before putting it up for storage, but had contributed that to dirt, cleaned carb several service hours before storage and installed aftermarket air filter (Ready brand) kinda like k&n and Uni.
Not much on carbs, but did just rebuild the brakes/cables, replaced brake light switch, cleaned and redid starter, cleaned out CVT of dust, etc.
