Default Winch cable....galvanized vs. stainless

I bought a used 99 Arctic Cat 500 4x4 with a Warn A2000. I dont like the looks of the original cable and would like to replace it.

I see you can get galvanized or stainless steel. What are the pros & cons or is one considered the only way to go?

Also, what is the standard length? I think mine may have been cut off already.
