do i need to rejet, or will choke solve this

I want to take my spark arrestor/muffler cap, and air box lid off to get more power. If i do these things will i need to rejet? I dont know how to rejet but there are 2 screws in my carb, one controls the idling/top-end rpm, but i dont know what the other one does, i think it controls the air/fuel mixture because when i turned it clockwise, it sounded like more air was getting to the engine.
in one article i read, it said that to check if your air/fuel mixture is right, you should drive, pin the throttle, and the hit the kill switch at high rpm and coast to a stop. Then it said to check the spark plug and if it is a nice tan colour, you have a good air/fuel mixture.
IF i take the air box lid off and the mufflercap/spark arrestor off, i think it will make my jetting lean, so if i drive it like that, do you think i'ld fry my piston?
i could try to make my mixture richer, but im not sure if i would be making my mixture richer or leaner
is it also possible that i leave my carb the way it is and use the choke to make my mixture richer?
