Like I mentioned a coolant pressure test can tell if there is any leaking or seeping externally or internally. Must hold 10psi with no drop in pressure. You can rent these at most auto parts houses for just a deposit. If it's coolant burning you can sometimes smell a sweet smell in the smoke. All it takes is just a small damaged section on a head gasket to allow coolant to enter the combustion chamber.

Then sounds like the cooling system pressure test is ok. You've cleaned the carb and changed the oil, added Seafoam to the fuel and still smokes. Then it could be you have some blow by,oil getting past the rings into the combustion chamber. There is another test which involves a compression leak down tester that can check for any ring or valve seepage.20% leak down or more could involve having to pull the top end down. Here's a small engine leak down to give you an idea how it works.
Plus you can pull the oil pressure relief valve and spring to check if the valve is sticking. It's job is to stop oil from leaving the oil tank and filling up the engine sump when the engine is off. This can create problems if it is. This is actually where the service manual can help the best.2006 Polaris Sportsman 500 Service Manual PDF Download
