I use the Polaris 0w40 synthetic oil in my 500 year round because the synthetic still flows well in cold weather. I usually park the Sportsman in the garage, but if I leave it outside in -30 weather it will still turn over fairly easy and start. People complain about the price of synthetic, but it's worth the extra $10 a year to use good oil.
My Sportsman came with a #40 pilot jet. For cold weather, switching up one size made it idle and run much better with no noticeable difference in the summer.

0w40 is the thinist oil available. 0 denotes the viscosity at standing temperature, 0 being as thin as it gets ,and 40 is the operating temperature ,when the oil is moving and warm. 0w40 covers an amazing range of temperatures.....even at -40 its still runny... I checked last week! lol
