Could be a lot to do with your clutching and throttle response as stated above. Also my belly pan don't rub much ethier (17 3/4" clearence lol).

Depending upon the year.... The Magnums actually had a lower front axle gear ratio than the rear axle.... and geared lower overall.... which is the opposite of the Sportsman 500. You can look it up in the parts manuals on the Polaris web site.
The other side of the coin is... The Magnum will be squirrelier than the Sportsman on fast slippery fire roads because the Magnums rear ratio will push the front end when the 4 wheel drive kicks in.

It just may be that one machine is inherently better-suited to certain types of riding. My wife's Hawkeye is way easier and better than mine at the type of riding you described. The Hawkeye has a very low gear range, low clutch engagement speed, and EBS, all of which my H.O. does not.
