First off, they're both "Zuki's". We're talking about the Suzuki LTZ250 and the Suzuki LT230S.
As far as the handling, the 230 is nearly 20% lighter than the LTZ. Second, the 230 has more front suspension (6.7 inches versus 6.1). Third, the 230 has a lot more rear suspension (7.9 inches versus 6.1). Fourth, have you seen the suspension geometry of the LTZ? The rear is more like a utiltiy quad than a sport quad. Check out this pick of the shock angle. It's nearly straight up and down!

Don't get me wrong, the LTZ is a great little beginners bike. It will be way more maintenance free than the 230, and probably a lot more fun for most kids who don't want to put up with the hassle of kick starting a four stroke and working on a 20 year old quad just to keep it going. But the 230 would handle better hands down. Again though, I'm talking a stock 230 in good shape. Not a ragged out junker with worn out bearings, tie rods, and brakes.
