grained is what I was thinkin. When we lived in Texas, and older man trapped wild hogs and made BBQ out of them. Damn good eats in that form. BBQ sammiches [img]i/expressions/face-icon-small-happy.gif[/img]

edit..... what did you mean by grained? grain fed, or like grained / shredded bbq? I meant it like shredded

When we have a bull that is past his prime and the hamburger animals prices are down we neuter him (make a steer out of him, not a fun job), then put him in a feed lot and fatten him on alfalfa and grain for four or five months. Makes for a very fat animal and you have to trim a lot of fat off the meat but it has a great flavor and is really tender. Open range bulls that have been "working" usually are like chewing on the sole of an old boot. If an old bull has been getting some grain and is on grass it's questionable how good the meat will be. Young animals I think grass fattened beef is the best.

I have had shredded beef BBQ a few times and liked it, the Caveman BBQ on West Valley Hwy south of Tuckwilla has good beef that way.
