Josh, there are tons of places just outside of town.
If you take 1-15 North, just as you leave town (past the speedway exit) You will see an exit for Apex/Nellis AFB. Take that and immediately as you exit you will see hills and valleys covered with trails. Apex has everything from flat winding gravel canyon trails to extremely hairy hill climbs, big air jumps, and steep drop offs. and everything in between. If you venture a little south either on the trails of apex, or along the road for the apex exit, you will see nellis dunes. self explanatory.
There is also cold creek. That is a little further out of town, but it's in the mountains, so it's cooler. Take 95 north to the cold creek exit(about 15-20 miles from town) and watch for the park sign on the right as you head up the mountain.It's mainly trail riding there, but you can ride to the top of the mountain, wheeler pass, and all the way to pahrump if you want. There are wild horses around, which are actually pretty tame. take some apples if you go there. they are known to walk right up to you if you stop.
