paint or powdercoat?

You are correct. The max operating temperature for a low nylon powdercoat is around 300 degrees with a recommended ceiling of 315. However, for high heat applications, you should look into ceramic coating. Able to handle a constant operating temp of 1200 degrees, you won't have to worry about it discoloring, melting, or flaking. Check out Airborn Coatings for more information on ceramic, powder, and xylan coatings.

Absolutely on the ceramic coatings! I built a V8 motorcycle (similat to the Boss Hoss) and my headers are all ceramic coated. They still look brand new after 8000 miles! This particular company called the ceramic coating Jethot. I am sure they all have their names. The ceramic coating is also a bit scratch resistant. Really works, even on headers.

I've used this VHT heat resistant paint. Its ment to resist up to 700 degrees celcius I don't know yet i haven't got my zilla back together. Looks okay but i had to spray heat resistant laquer over it as it smears like glass but laquer solves that. BTW it comes in aerosol cans.
