Try a search on here about this. I remember reading a couple threads about the grizzly and entering water at too hihg of speeds and how it bogs down. Something to do with the engine being hot and when the water hits the motor. Try entering the water at lower speeds.
I'm assuming it does this in small rivers or creeks (up past floor boards) but not puddles.

How deep are we talking? Don't forget if you up over the tires completely it makes it harder for the tires to turn, that could be another thing you are experiencing, perhaps alone or in combination with entering the water at too high of speed.
Are you in low gear or high gear when crossing the rivers?

when the engine is hot and you hit water it creates steam. the steam gets sucked into the pannels into the intake. Try taking the panels off or cuting a bunch of holes in the \m to allow the steam to escape.
