Always use a light coat of oil in the cylinder,piston, rings and all moving parts before initial start up. Once running just let it warm up a to operating temperature and kill it it. Then after cooled down you can drive it around varying throttle ,but no wide open speeds. At least this is the way I've always done. Most new engine manuals allow about 2 hrs or so of driving for rings to seat.

Entirely up to you whether to do it now or wait,but you need to make sure the cylinder is coated with oil, plus all parts protected from moisture/dirt until you do decide put it back together. Cold weather just takes longer for engine to warm up.Break in time is the same regardless of outside temp.
