I have a fairly modified Banshee with skatt tracks (10" rims). I want to go to some haulers (10" rim) but I'm not sure on the number of paddles. I like to hill shoot and dune hard. How will the 10 tire set up vs. an 8 paddle tire compare.

Eight paddle. It will turn a ten but w/ more effort and when you let off the gas it will seem like your dragging an anchor behind you.
