I have 2 2000 Beartrackers, a green one, and a red one.
The green one runs great all the time.
The red one will cut out once in awhile for no reason.
I try to restart it , no luck.
Then I put the choke on full, then it starts right up....
Just wondering if anyone else has had this problem, and what they did to solve it.

It sounds like you have a bad problem with either the fuel or air coming into the engine.

On the Beartracker I would suggest for you to check the rubber intake manifold between the carburetor and engine before doing anything else.

They are prone to developing cracks [like the other Yamaha utilities] and having symptoms exactly as you describe.

Check the intake tract going to the airbox to make sure it isn't stopped up.
Check your carburetor vent hose to make sure no mud is blocking it.
Check to make sure the gas cap vent tube isn't stopped up.
Check to make sure you don't have any contaminants in the fuel.
Drain the tank and carb. and pour in fresh fuel.
If none of this helps, you will most likely need to take your carburetor apart for a good cleaning.
