Default Tuning A YFZ

Ive got an 04 YFZ with a full GTYR titanium exhaust, head work, and the usuall air and fuel delivery mods. I just had the machine idling in the garage and the head pipe was glowing red. This means it's running lean (correct?). Which way, when looking DOWN at the carb, should i turn the air fuel screw to richen the mixture up? I realize tuning a machine is a trial and error kinda deal so im just looking for some guidelines and suggestions and whatever.

Another problem, no matter how much I adjust the clutch up at the lever, I cant seem to get it to disengage as quickly as I would like(So I can use one finger to operate it). In fact unless it is loosened significantly the clutch is actually engaged slightly when it shouldnt be. It will still idle in gear but it will not start in gear(with the clutch pulled of course). Is my clutch finished? Any Ideas?
