The Zerks are probably dried out and starting to rust....Spray them with WD40 and let sit for awhile. Keep doing that until you get the grease flowing. When you are done greasing, DO NOT wipe off the excess grease on the fitting. Otherwise they will dry out again.

If they are REALLY stuck, you may have to unscrew them & clean them out from underneath with an o ring pick. Clean out any hard gunk from where they screw in, too.
Leaving the excess grease on the zerk will help it keep from rusting. Just wipe it off before you try greasing it again.

Got one question, what Cat is it? This didn't occur to me, but one of my friends just purchased two new 300 4X4 and couldn't get two grease fittings to take grease. I tried with my air grease gun and had it up to 125 psi, and they still wouldn't take. He ended up taking it to the dealer and they had the grease gun up to 145 psi, and it still wouldn't take. The dealer finally phoned down to Minnesota and the engineer told him that they were just plugs, they didn't have any plugs that would fit, so they put grease fittings in the holes. Thats what was wrong with those machines and the were on the bottom arms, it might not be whats wrong with your machine.
