Frustrated with KFX80 Carb

I accidently posted this over on the Kawasaki site instead of the kids quads section, so sorry for the repost, but any help is appreciated ......
My son's KFX80 wasn't starting, and I knew the culprit was probably the carb, so I ordered the rebuild kit off eBay, cleaned the carb, and replaced all the jets and the float. I also drained the gas tank and put in fresh gas (with Stabil).
As soon as I got everything back together, it started right up like a CHAMP and it ran great. The next day, I went to start it and it wouldn't start again - battery good, starter good. So, I sprayed carb cleaner in the carb and cleaned the spark plug and it started right up. Ran great all day yesterday, and even after sitting for a couple hours, it started right up.
This morning - it won't start again!! Could I have a bad choke or something?? What am I missing?

Yes - it was a little wet, and it was pretty black even though it was a new plug. I thought about replacing the petcock with an aftermarket that has on/off, but on on/off valve my work just as well and be a lot less expensive. It does act like it's flooded when it sits more than a day - what could cause that? I thought the KFX80 system was supposed to shut off fuel flow when the engine stopped??
