Hydraulic Rear Brakes setup in 90cc Chinese ATV

My son rolled his ATV - everyone fine. however the accident basically broke the brake handle/brake reservoir on the handlebars. I have ordered a new rear brake system complete that should arrive today.
I am assuming it wont come with brake fluid so i was wondering what the setup sequence is once i have it bolted in place to get all of the air out of the line?
Also do i use standard dot 3 fluid?

I use normal DOT 3 brake fluid on my quads.
At the caliper on the rear axle is a bleed screw. Open this screw and gravity bleed the brakes by pouring fluid into the reservoir (keeping the reservoir 3/4 full as you go). Once you get fluid out of the bleeder at a steady flow, tighten the bleeder, press and hold the brake lever, and open the bleeder, allow the fluid to squirt out while still holding the brake lever down, and then close the bleeder tightly. Now release the brake lever. I repeat this step 3 times and the brakes are solid!
