Is the Sportsman 500 H.O. better than the Kawasaki Prairie 650? In The MUD?

I would have to say yes.
Drawing on my experiences riding with a buddy who has a 650 with 27" 589s and HL lift kit, I would say that the HO performs better. Don't get me wrong, the 650 is one he!! of a bike....but the HO stomps him everytime in the deep sloppy stuff. He had to snorkle his exhaust just to keep up with the HO's stock exhaust. (650 would die under water when the HO kept on bubblin')

Yes it is a better mudder. They love the mud. Their father was a mudder, their mudder was a mudder. Sorry....the Krammer is coming out of me. I am partial though....to the 500 HO
