I just did my first this past Saturday. It is a cross country race over natural terrain on a marked course. You aren't allowed to scout the course ahead of time. Part of the contest is for the racers to find and follow the course. Dangerous terrain is usually marked somehow so you can exercise caution. It usually is one or two loops or there's a time limit.
The starts are usually dead engine. The terrain is expert class type stuff with lots of obstacles, tight turns, etc.
The one I did this past Sat. was a 42 mi. loop. that started around 5200ft. elevation went up to 7300 ft. and then returned to the finish. Lots of off-camber terrain, near vertical drops, large rocks, narrow washes, deep whoops, tight turns in the trees so you can't see the next course marking, stream crossings, etc.

I think the classes depend upon the sponsor of the race. The one I just did only had one ATV class. There were only two utility bikes there and the rest were sport bikes.
You usually can sign up ahead of time. And it does cost money to race.
