We just recently bought a 650 V-Twin (2005) and my wife and I are going riding, my Cat has the fuel shut off on the side of the ATV but we can't seem to find hers and I would hate to drive with this on a trailer and get all the way there and find it flooded. Does anyone know where the fuel shut off is or what I can do to prevent this ???

The 05 650 V2 has no shut off valve because it has a fuel pump in the tank. There is little or no chance of flooding the carbs. because the tank sits lower than the carbs so it can't gravity feed to the carbs. I had a 2005 V2 and it never flooded so I would not worry about it.
