Default Best cold/wet/muddy outerwear?

Wasn't sure of the best thread to post in, so I'll try this one. I just picked up a used Outlander 650 and was wondering what folks like to use when riding in the cold/wet/extremely muddy trails. I see allot of people using the carhart's, but after an hour they look soaked to the bone. Maybe carhart's and rainwear? Don't want to get too bulky though.... Something warm and breathable would be great, but as soon as you get muddy, the breathable part goes out the window. Any recommendations?

I'd get something waterproof and breathable (which will be expensive), and then spray it with something like scotchguard so the mud slides right off. Maybe even PAM cooking spray. Hey it might work.
