I think most of those are in stroked bikes now and they are 703's
The 703 is a very strong bike but, if you don't want to split the cases, the 730 will get you more power than the 680 (102mm bore) will.
You can have a number of people bore your jug then re-coat it to 102mm. The Bom can get you a piston for this set-up and probably get you set-up on the bore.
The 680 doesn't have the power of a 730 (of similar build - i.e. cams, CR, carbs, head work - all being the same.) But, a 680 should be much less expensive to build.
