Going to the foothills of the Rockies this weekend for a few days of riding. 3000' higher elevation than my home, can I get by without rejetting my Outlanders?

You will be just fine. You will notice the loss of power from the rise in elevation, and she might run a little richer, but nothing that would make me rejet it.
