Tires for Colorado trails

I see tire recomendations everywhere, but I can't find a recomendation for Colorado's diverse terrain.
I ride on mostly rocky trails with some mud and snow. Obviously there isn't going to be a perfect tire for this since rocks and snow are probably opposite tire types. I'm mainly on the rocks and occasionally will plan to head out to Utah for the slickrock out there. Maybe I just need to have different tires for the winter snow runs.
Anyway...
96 Polaris Sportsman 500. Can you recommend a tire and a size. I'd kinda like to go up a size from the stock 25s if I'm not gunna lose much power... It would really help me in the rocks and snow. I'm afraid that the engine will have enough problems with the altitude here to go to a bigger tire.

I ride the Sierras. Lots of rocky, high altitude terrain. And, snow banks to bash through. Not much serious mud though. I really like the ITP Holeshot ATR's! They make the bike way more sporty. Don't know what size your rims are, but it might require a rim change which could get expensive.
