25XT's would be my choice. I got the 26" on my old 350 and they worked great, but they didnt have the deep lugs availible on the 25" when I got them. If you really need the extra clearance, go 26". But I will warn you, the 400AT seems to be lacking on low end grunt so it may have more problems turning 26" tires in the mud.

you can now buy the 25's in a deep lug XT. on the smaller cc quads I would recommend sticking with 25's or the 26's at most. you may need a clutch kit if you install larger tires than that. take a look at my gallery, I have the 27's on type 6 wheels. I have the stock 25" wheels/tires in the classifieds.

Here's where I was planning on buying from:
PVpowersports
They have a 25x8-12 XL but it doesn't look like they have an XL for 11" wheels. They have a 25x10-11 though. Is that the smaller lug version? What happens if I put deep lugs on the front and shallow on the back?

once you have your lowest price then go to www.lesteratv.com and contact Melanie in sales. tell her david Krueger referred you her way. she will beat any price you have.

I just checked the Honda website, it's hard to believe they would put different diameter rims on front and back, but they do
In any case, if it's any help to you I have 25 inch Mudlites on my 400 Foreman, with the standard size lug, and I don't have any traction problems whatsoever for what I consider normal use. If you're intending on doing some heavy duty mudding, you might need the extra lug height, but the problem of engine power is going to rear its head I think. I wouldn't want to go any bigger than what I have now for two reasons. One is chassis clearance, the 25's are close enough as it is although the Foreman isn't overendowed with clearance anyway. I think the 400 AT and the 400 Foreman use essentially the same powerplant, not a bad thing but not a real powerhouse either.
I noticed a slight drop in power after I put the 25s on, the stock tires were 24s. Nothing too extreme though, only noticeable in really slow going, crawling over stumps, etc.
I feel 26s would be more of a load than the quad could handle without some performance mods, and once you start going that route you open up another whole can of worms when it comes to reliability, etc.
My 2 cents
