Primarily looks, I don't see to many pro riders rockin the track with full fenders equipped on their quads. I guess you could pull some more power because of less air resistance and such, but thats a long shot. Until your riding with them, I'd just enjoy the water blasting you in the face..
I had my fenders shaved a year or two ago..Kind of throws you off after looking and riding with them for so long.

Biggest reason is that track dirt cakes up real well on full fenders and increases the weight of the quad. Once you have enough weight and jump, it also cracks your fenders at the mounts.
Allows better visibility on a track.
