2 questions:
is there a problem swapping from 25 to 26 inch tires?

is there a problem having 26 inch on the rear and 25 inch on the front?

putting 26's all the way around is fine

26's on rear and 25's on front is NOT fine. It will cause driveline bind-up and quickly wear out the front and rear diff's or transmission components, as well as cause cornering and handling issues.

 

Do not mix sizes on a 4 wheel drive 4 wheeler. You will damage it. As far as swapping tires to 26 inchers, you'll be fine. If you really want to do a great mod to that Foreman, get a warn 424 kit. This is the single best bang for the buck.
