putting 26's all the way around is fine
26's on rear and 25's on front is NOT fine. It will cause driveline bind-up and quickly wear out the front and rear diff's or transmission components, as well as cause cornering and handling issues.

Do not mix sizes on a 4 wheel drive 4 wheeler. You will damage it. As far as swapping tires to 26 inchers, you'll be fine. If you really want to do a great mod to that Foreman, get a warn 424 kit. This is the single best bang for the buck.
