Use the same equipment you would wear if you were snowmobiling.....
Heavy boots, heavy mitts, & snowmobile suit. Dress in layers so that if it warms up you can take some off. Better to be too warm then cold.
There are a few accessories you can get for the quad that will help, like heated grips and a fairing/windshield.

I live in Tomah Wisconsin, and its about -30 degrees with the wind chill. Its not hard keeping your body warm, its hard keeping your FACE WARM! i rode tonight for a few hours, and its god dang cold out there...its the cheeks and chin that get cold. Sure you coudl wear goggles and a scarf around your face (under your helmet) but then your breath goes up to your goggles and fogs them all to hell. and you cant see. I will find some way to keep my face cold but it will be hard to do

If your going to do a lot of cold weather riding, I would suggest you buy a full face snowmobile helmet. They are designed to be warm and so that your breath will be directed downwards, which helps to helps to keep the visor fog free. If you want to go to extremes, you can even get them with electric visor defrost.

I just purchased a balvaca from Cabelas, and it works pretty good. It is made from a neopreane(killed that word), and is very thin, so it fits under your helmet good. I also just purchased a full faced snowmobile style helmet. I didn't get a chance to ride with this helmet yet, but it feels pretty warm. Now I have summer and winter helmets. I would definately put on some hand warmers and a thumb warmer, because they work great.
