a utility quad will definitely be more stable, and is definitely oriented toward carrying weight...however the problem of having a second person's weight and flexible mass will still exist. Its kinda like riding with a big sack of water...it will shift around for any number of reasons/causes and is hard to predict and compensate for. I am sure you already know this.
I have seen lots of seats added to back racks so that a passenger could ride...in fact there are several aftermarket rear seats/storage box combos that bolt to the rack and are pretty cool...still, the end result is that it is on a vehicle that was designed for 1 rider.

I rode a Warrior for many years, in a past decade. It's a dog!!! While it is very reliable, Yamaha just didn't get the frame or ergonomics quite right. While it isn't heavy "on paper", it handles like it is way heavier than it is. This is a tired old design, so do yourself a favor and pass it up! And, the Raptor 350 is just as bad.

I have had a Honda 300ex since 2002. I ride my girlfriend on it all the time. I have never had to do any maintance on it AT ALL except change the battery. Never got new tires, brakes, clutch or anything. Please do youself a favor and don't get a utility quad. They are a waste of time. Your a guy. You are going to ride your girlfriend around like i do but when you ride by yourself you are going to want the racing style quad (the 300ex). I also have a Honda Fortrax 300 and the power difference is soooo much. My 300ex i like 10000000000 times more. The 300ex is HIGHLY reliable and i would recommend it to anybody! Especially you.

So if you choose to ride something somewhere other than on a track or smooth trail, it's a waste of time? Maybe mudbogs and rock climbing aren't your cup of tea, but it's definitely popular with most of the rest of us.
If you get past the current flurry of 450 racer info currently flooding the ATV news, you will notice there are plenty of MEN who ride 4X4s, and many of the bigger 4x4s will flat out SMOKE your 300EX in a drag race...which, to begin with, is kinda small to be talking smack about...
yeah, the 300EX is indeed a fun ride, but let's keep your enthusiasm tempered with a dose of reality here...pretty much everything else made that is 250cc's and above will out-accelerate the 300EX....it is a very old design.
On different occasions, I have ridden a 1994 300EX (in 1996), a 1995 TRX300 (in 2000), and my 2005 Suzuki Vinson 500 4X4 (in 2004 and 2007) on the Paiute Trail, and there's no way a 300EX can handle climbing Trail 66...when they say "steep" and "rough" on the National Geographic map, they freakin' mean it...all boulders and ledges, so you better not go there without 4WD amigo...that's where the MEN ride!
Maybe you ride with a passenger, maybe you ride with no helmets, maybe you ride with a beer in your hand...I don't know...but there are damned good reasons why you AREN'T supposed to do those things

Thats a better choice...hey, it's still not designed for it, but since you're going to go this route, at least do it right...
If you can find an old sofa cushion (folks set them out on the curb all the time) you can make a heck of a comfy seat to go on the back rack (peel the cover off first)...the foam is thick enough to be able to shape it, and then cover it with some good thick vinyl. mount it on a piece of plywood, and then bolt it to the rack using u-bolts.
You will find that your GF will probably have enough room to hang her legs behind yours without getting in your way, (there is definitely more room there than on a sport quad) but if she needs a footrest there is a company that makes footrests that are mounted on rods that bolt between the rear rack and the stock footpegs
