i have a 2001 honda foreman es with a snorkle i took it mudding this weekend and went through some water and mud and got stuck after i got out my bike was making a funny tapping noise so i shut it off and had somebody come pick me up when i got home i look at the oil and it was all milky like water had gotten in so i drained it and put new oil in and now it is smoking non stop. does anyone know what caused this and if so how to fix it and how much someone would charge to fix it

When you get grit/silt/mud in the oil, it damages the piston, rings and cylinder.
Some will recommend flushing the oil with diesel or something and rebuilding the top end, but in my experience that will be a temporary fix until more grit from in the oil passages and pockets behind bearings and so forth just trashes those parts again.
The only way to be sure it is really fixed is to disassemble the engine completely for cleaning. Then mic out the cylinder and piston to see if it needs rebored, or if you are lucky just hone and new rings.
I'd also suggest replacing the oil cooler. You can flush it out, but there's no way to tell if there is silt in there waiting for hot oil to come loose and trash your freshly rebuilt engine.

I wouldn't recommend trying the diesel thing.
Buy yourself a service manual. If you haven't completely disassembled a motorcycle or quad engine and transmission before, you may want to have someone experienced to help you.
I would guess a shop would charge more than $2000...

i guesse you could call me a beginer with 4 wheelers but how much is involed in doing a top end or what ever i need to do and if so would the repair manual help me out the whole way..and if this has anything to do with my problem i had oil coming out of my exhaust
