start & idle issues 1996 Rancher?

OK guys,
I am new here, typically a motorcycle guy, but I have picked up a 1996 rancher 300 2wd, that I use a bit here on the ranch, and my daughter loves to ride.
Anywaything has always been a bit hard to start, and it doesn't idle well, stalls alot, but it runs fine. So i figure I have some carb work to do, and I probably ought to check the valves while I am at it.
Being a 2 stroke guy, i don't know how you guys decipher a 4 stroke carb - seems alot more complicated to me!
so first as i take it apart - turns out it is missing a Needle Valve (the thing that hangs off the floats, don't know where it went to, but the thing has been running without it for 6 months at least. so i will replace that, and i need to replace the gasket/Oring around the float bowl, and a missing screw from ther float bowl, and all of those things may help, but what about changing out the idle jet - I assume that controls the idle, and seeing as how it is cal cARB, I am thinking I might need to go up 1 or 2 jet sizes?
anyone here care to help out a dumb 2 stroke guy?
