I just cooked up some rabbit......mmm....mmm.....Good!
made these last night, thought it might be worth posting
Deer Burgers
you need
about 1 1/4lbs ground deer meat
about a 1/4 to 1/2 cup of fried corn
1/2 red bell pepper
1/2green bell pepper
2 large garlic gloves
1/2 of a very large onion (i like softball size red onions)
2 eggs
about 1/2 cup of bread crumbs
pepper and salt (i always like to put more salt then i think i need)
a lil season salt
small dash of O-bay
about a table spoon of honey
worchester sauce
Chop up the peppers,garlic,onions add your spices,eggs,corn,bread crumbs, honey and worchester then you gotta add your hands mixing with a spoon is for sissys, I like to make 5 huge burgers and b,cuz there so big i dont use hamburger buns i take regular sliced bread and toast it in the oven one slice with butter and garlic powder and the other with cheese

Your venison sounds good, I have just been rinsing the chops/steaks to get them clean,then putting them in a ziplock bag then season the heck out of them with Famous Dave's Steak and Burger seasoning, McCormicks Grill Mates steak seasoning, onion powder, and whatever else you like, work it around to coat the meat, then leave it sit overinight to soak in before tossing on the grill, haven't had a problem with extra blood causing any taste problems, and it tastes great.
