I have to agree with you-in mud and snow, a higher pressure in the tires seems to not only give it a "taller" profile, giving more ground clearance, but also seems to "cut" through the muck to reach the bottom better.
I used to do that in my truck alot, then for sand riding, I'd just pull the plug, let it all out. The "flat" tires provided a wider footprint for crawling on top of the sand better than the higher pressures which dig too easy.

There's a section of Assateague Island, MD that is accessible only by 4-wheel drive trucks / jeeps(sorry, no ATVs). They have an entry station where they drop your tire pressure to about 20 pounds before you proceed on the sand.
