Well, my 02 p 650 had been sitting for about 3 months without much driving. So, I take it out and immediately noticed a problem. While I would be accelerating it would lose power and almost die. Eventually, it would lose all of its power and die. I tried this over and over again with the same results! Any suggestions?

Check/lube your choke plungers, stretch out your plunger springs or get new ones/whole cable & plunger assembly from 03, Drain & clean your fuel bowls & jets & pilot jets. Add some fresh gas, Ensure your petccock is not clogged & Clean your airfilter and ensure no critters has made a nest in your air snorkel.
Now that it is colder you need to re-adjust your fuel mixture a little richer a tad.

Drain all the fuel out and put new fuel in and treat with fuel stablizer.
pull out float bowl screws and drain both carbs, catch the fuel and look for dirt and sludge.
if you find anything in them, then a fuel system cleaning service is needed. Clean out tank, fuel lines, carb bowls
