Some, maybe all, Eton 90s were two strokes so the exhaust could be blocked. Worth checking for that if it is a 2 stroke. The most common cause of the engine stalling when you rev up, is carb partly blocked, but I assume you have cleaned it or fitted a new one. New doesn't always work though, as you may have to set carb jets or even fit different ones, to get the engine running properly. Does the bike roll OK? If brakes are sticking, the engine may not have the grunt to overcome this when taking up the drive, same goes for faults in the drive train, variator or gearbox problems. $1000 seems an awful lot to have spent without result. I guess you could have bought a good used Eton 90 for less.
