When they put an engine together, things aren't EXACTLY matched up. There are high spots, low spots, and some of the surfaces aren't fully 'shined in' so to speak. By giving it 10 hours to 'break in' you are letting the parts wear together without undue stress, until all moving surfaces are smoothed out. The first 2 or 3 hours are the most critical, vary engine speed fairly often, and don't work it too hard. If it is worked too hard too soon, you risk the chance of overheating a bearing or shaft, causing it to 'gall' or possibly even sieze.
However the BIGGEST reason to not give it too much gas for 10 hours is to give the cylinder/piston/rings a chance to wear in. Running it hard will 'seat the rings' and if that is done too soon, before the cylinder smoothes out, your machine will burn more oil than one run easier at first.
Saying you will mess it up might be a little strong, but you will shorten it's maximum life.
Think about it, your engine should go over 500 hours, maybe even 1000. 10 hours of half throttle is a small price to pay for maximum life.
