HOT ENGINES?

I see a lot of posts concerning Jetting, Oil weight choices and other items referring to engines running "hot" or "hotter with a XX size jet vs a XX size" etc... .
I want to know how small changes,(not red head pipes or pinging)are indicated for the more tech savvy.
Also I have wondering why performance machines (such a 400EX, Raptor, Banshees etc..)don't come equipped with Oil Press, Head Temp, Water temp guages, or at least a simple Tach.
Lastly I've been looking for these type guages and Tach sources and was wondering if the commercial race comp's like Alba, Nac's or Trinity does anything like this.
I was thinking of the Snowmobile industry as a source maybe.
Would appreciate real info not anecdotes please.
