Default 400ex carb settings and jetting

Ok guys first off I'm new here.I just recently got a 2001 Honda 400ex and I am having problems with the carb settings and jetting.I have grow up working on cars for a living and fairly decent with ATVs.I bought the quad with a bad motor and it was all stock so let me start from the beginning.The quad now has a wiseco 11:1 86mm piston,hot cams stage 2 cam,ported head,k&n filter,fresh top end,performance coil,11,000 rpm rev box and a pro circuit t4s full exhaust.The quad is broke in now but is topping out at around 8,700rpm and 66mph.Bottom end is great tho.I currently have a 42 pilot jet and a 178 main jet.That is just based on what the local atv repair shop told me.Please help at least get me close.

By the way it is still the stock carb on the quad and by topping out I mean it just acts like it has no more throttle.i also have a trail tech vapor so that's how I know speed and rpm.And it runs around 225 degrees if rode wide open for a 1/2 mile or so and around 195 if it isn't rode hard.
